Nasi Lemak Pizza by Andrew Lim

Here is a marriage of 2 of my most favorite dishes; Nasi Lemak & Pizza.
So I whipped up an East meets West dish of Nasi Lemak Pizza...without the Nasi actually.
I used coconut oil instead of olive oil and I added coconut cream to the pizza dough, and the result is a soft and fragrant pizza dough.

Don't let the long list of ingredients scare you off, especially with the convenience of Prima Taste Authentic Asia Cooking Sauces, this fusion pizza is not only easy to prepare, it is delicious to savour! Enjoy the best of both worlds!

Nasi Lemak Pizza…but without the Nasi!
Makes 2 18” Pizza

Dough

3 cups of bread flour
1.5 tsp of yeast
185ml warm water
65ml of coconut cream
2 tsp of sugar
1/2 tsp of salt
2 tbsp of coconut oil

Add the yeast, warm water and sugar in an electric mixer bowl. Stir till well combined.
Add the 3 cups of bread flour and turn the mixer on low using the dough hook.
Increase the speed to medium after 3 minutes.

Kung Po Chicken Prata Pizza by Rontree Chan

Recipe for 2 pizza 
Ingredients:
200g boneless chicken thigh ( diced)
2 frozen prata
6 slices ginger
2 cloves garlic (sliced)
20 dried chilli ( washed and seed removed)
3 stalks spring onion cut into 5 cm length
1 bowl shredded mozzarella cheese
3 Tbsp cooking oil
1 Tbsp Hua Diao Chinese Wine
(Sauce)
4 Tbsp Woh Hup Kung Po Sauce
1 tsp dark soy sauce
1 Tbsp black vinegar
(Marinate)
1 Tbsp light soy sauce
1 tsp sesame oil
1 tsp Hua Diao Chinese wine
1 tsp corn flour

Method:
1) Matinate diced chicken for 1/2 hour.
2) Pan fry frozen prata with little oil till it turns lightly brown on both sides . Remove from pan.
3) Spread thin layer of sauce on one side of prata surface ( leave remaining sauce for frying chicken). Sprinkle shredded cheese over the sauce surface. Set aside.
3) Using the same pan, heat up 3 Tbsp oil. Add ginger, garlic and half of spring onion ( leave half portion for garnishing) fry till fragrance.

Noodle Pizza by Michelle Heng

Ingredients
1 pkt instant noodle (discard seasoning)
1 egg (lightly beaten)
1 pc sausage (sliced)
2 pcs crabsticks (sliced)
1 pc fresh mushroom (sliced)
4 tbsp Korean bbq sauce
Mozzarella & red cheddar cheese
1 tbsp oil

Steps
1. Boil noodles as per instruction on the packaging but less off 30secs so that the noodles are springy and a little under cooked. Drain thoroughly.
2. Mix the noodles well with the beaten egg.
3. Heat oil in a skillet and pour the noodle egg mixture into the pan, flatten it to form the pizza base. Cook over medium low fire till base is brown and a little crispy.
4. Transfer the noodle pizza base onto a baking pan if your skillet cannot be used in the oven with the browned side on the pan.
5. Spread a thin layer of cheese onto the base (this is to prevent seepage of the sauce) followed by the Korean bbq sauce and the toppings then another layer of cheese.
6. Bake in a preheated oven at 190 deg C for 10mins or more till the cheese melts and browns. Serve hot.

Homemade thin crust pizza by Jumi Tan

Dough

1 cup of lukewarm water (250ml)
1 teaspoon of sugar
Half teaspoon of salt
2 teaspoon of yeast
Half teaspoon of baking soda
2 tablespoon of olive oil
3 cup of flour (450g)


Steps
1. In the cup of lukewarm water, add in yeast, salt, sugar mixed well. Next, add in oil
2. In the bowl of flour, add the baking soda mixed well. Slowly pour in water (at step 1) and form a dough, I dont believe U need to use up all 250ml of water. As long as U can form a nice dough, throw away the left over water mixture.
3. Set it aside at a warm place and let it ferment for 1 hour. Cover with a lid.

After one hour...
1. The dough would have rise double its size. Knead gently to get rid of gas in the dough. And roll out a flat sheet to shape into the pizza shape tat U want.

For pizza sauce:
A small can of tomato puree, add water (to make it more watery), sugar and home-made chili paste, sesame oil and pepper.

For temperature, sorry I cannot advice U on that as U can see I am only using a small humble toast…

Pizza by Jensie Tan‎

150 g soft butter
100g sugar
15 g yeast
1 egg
1tsp salt
450g water
500g bread flour
500g plain flour

1) put all the ingredients except flours n beat at medium speed for about 3 min add in bread flour n plain flour n continue to beat into smooth dough n keep aside for about 25 min
2) cut into small pic about 50g to 60g n roll into flat round
Place on the pizza tray n rest for 10 min
3) mix the topping ingredients except mozzarella cheese
Spread the tomato sauce or pizza sauce with the filling n leave for 20min
Preheat oven to 200 c
Bake about 10 to 15 min add in cheese n bake another 1 min done




Pizza by Lena Lai

Ingredients : A
200gm water
2 tsp yeast
10 gm sugar

B
400gm bread flour
20 gm olive oil
1/2 tsp salt


Method :
Warm water n add sugar n yeast. Let it bubble. Add in B. Knead till dough is smooth. Proof till double in size. Punch air n roll thinly. Lay it on parchment paper. Use a fork to lightly prick on the dough. Spread BBQ sauce followed by tomato purée. Then add all the ingredients. Sprinkle Parmesan cheese, garlic powder n pepper. Top with lots of mozarella cheese. Lay the pizza on a tray with holes ( u can use those for steaming). Bake in pre heated oven at 200 degrees C for 20 min.

Notes :The ingredients is quite standard. If u have time, let it proof in the fridge for 6 hrs. Tasted better.
One more thing, while rolling, if the dough sprung back, do not roll it. Let it rest for abt 10-15 mins. If u force-roll it, gluten will increase n it will spring back even more.


Pizza Pull-apart Loaf by Rita Choo

(I halved the recipe and used grated cheddar cheese, yellow capsicum & tomato sauce)


Ingredients4 cups sifted self-raising flour
90g chopped chilled unsalted butter
150g chopped ham
3/4 cup grated tasty cheese
1 green capsicum, seeded and chopped
1/2 cup milk and
1 lightly beaten egg
1/2 cup tomato pasta sauce


Method
Preheat oven to 190°C. Line a baking tray with non-stick baking paper. Place flour and butter in a large bowl and, using your fingertips, lightly rub the butter through the flour until the mixture resembles coarse breadcrumbs.Add ham, 1/2 cup cheese and capsicum, along with milk and egg and knead lightly until just combined. Turn the dough onto a lightly floured surface and knead lightly for a further 3-4 minutes. Shape dough into a 20cm round and place on prepared tray. My daughter and I made 4 different pizzas using various ingredients such as tomato paste, pizza mixed cheese, bacon, chicken, prawns, scallops, spinach and mushroom. Sprinkle olive oil and salt, taste is really good. My family loves very thin crust. Happy they liked my customised super crispy and thin crusted pizzas today!

As for the ingredients, I pan fried all the seafood and meat first before putting on the pizza dough. I added salt and black pepper (except for bacon) to fry till almost cooked. If your crust is very thin, you can bake around 10 to 12 mins. Once the outer crust turns brown, you can off your oven. Nice and crispy!

Dough Recipe:
Bread flour 300gm
1pkt instant yeast
180ml warm water
50gm olive oil
2 tsp sugar
1tsp salt.

Method:
Sift flour n mix with yeast.
Mix oil,sugar n salt into warm water.
Add wet ing. into flour n mix well. Knead well n cover with a damp cloth for 1/2hr . Spread on a baking tray n bake for 5 mins on preheated oven. Spread sauce and with ayour desired ing and bake for 15min at 200°c

Yeast Preparation

Mix yeast, 1 packet or 11g into a bowl (1 cup) of slightly warm water.Add 1 tbsp of sugarMixed it well and leave it untouched for 10 to 15min or until yeast mixture become foamy
