Oyster sauce chicken by Nora Leong



Ingredients
1) 16 pieces of mid wings marinated with 1 tbsp of oyster sauce, 1 tbsp of light soy sauce, 1/2 tbsp dark soy sauce,1 tbsp sesame oil, 1 tbsp of chinese wine, 1 tsp of sugar, 2 dash of pepper and 2 tsp of corn flour
2) 4 big yellow onions (cut into big chunks)
3) 3 carrots cut into bite size
4) 4 potatoes cut i to bite size
5) 1 whole medium size cabbage (cut into big pieces)
6) 1 can of button mushrooms

Sauce (estimation)
3 tbsp of oyster sauce
2 tsp of sugar
1 tbsp light soy sauce
1/2 tbsp dark soy sauce
1 big bowl of water

Method
1) Heat up some oil over med heat
2) Sautee onions till soft and fragrant
3) Add in carrots and potatoes and stir fry abt 2 mins
4) Add in the wings and mushrooms. Mix well and stir fry another 2 mins
5) Add in the sauce, mix well. Once start to boil, turn to low-medium heat, cover and let them simmer for 15 min. Make sure the sauce is 1/2 an inch above all ingredients
6) Remove cover and place all the cut cabbage on top of all the ingredients. Do not mix yet cos it will be difficult as there are a lot of cabbage and they are big pieces and hard. Cover for 5 min
7) Now you can mix them as they have turned soft
8) Cover and simmer another 2 min
9) Gently stir in cornstarch mixture to thicken the sauce
10) And its ready to serve
