Nasi Lemak Pizza by Andrew Lim


Here is a marriage of 2 of my most favorite dishes; Nasi Lemak & Pizza.
So I whipped up an East meets West dish of Nasi Lemak Pizza...without the Nasi actually.
I used coconut oil instead of olive oil and I added coconut cream to the pizza dough, and the result is a soft and fragrant pizza dough.

Don't let the long list of ingredients scare you off, especially with the convenience of Prima Taste Authentic Asia Cooking Sauces, this fusion pizza is not only easy to prepare, it is delicious to savour! Enjoy the best of both worlds!

Nasi Lemak Pizza…but without the Nasi!
Makes 2 18” Pizza

Dough

3 cups of bread flour
1.5 tsp of yeast
185ml warm water
65ml of coconut cream
2 tsp of sugar
1/2 tsp of salt
2 tbsp of coconut oil

Add the yeast, warm water and sugar in an electric mixer bowl. Stir till well combined.
Add the 3 cups of bread flour and turn the mixer on low using the dough hook.
Increase the speed to medium after 3 minutes.

Add the rest of the ingredients and mix on medium speed for around 10 mins.
Remove the dough from the hook, split the dough into 2 and shape the dough into a ball shape.
Brush the dough with a bit of coconut oil and keep them separated in 2 bowls. Cover the bowls with plastic wrap or cloth and let them rise for about 1 hour.

After 1 hour, roll them out and put them in baking trays ready to be baked.

Ingredients

1 pack of Prima Taste Nyonya Sambal paste
1 cup of cleaned and soaked ikan bilis
12 prawns
1 onion; sliced thinly

Fry the ikan bilis in a little bit of oil. Add the sliced onions and fry till the onions are soft.
Add the Prima Taste Nyonya Sambal paste and fry till fragrant. Add the prawns and 2 tbsp of water.
Set aside.

3 chicken fillet; cut into chunks
1 tsp of corn flour
2 tsp of ground turmeric
1 tsp of ground fennel
1 tsp of ground cumin
1 tsp of sugar
1 tbsp of oil
A pinch of salt

Marinate the chicken chunks with the spices, sugar, salt and oil for at least 1 hour.
Set aside.

2 eggs; lightly beaten
Salt
Fry the eggs into a thin omelette and slice them thinly. Set aside.

Making the Pizza

Pre-heat oven to 200 Deg C.
Spread the prawn and ikan bilis sambal on the pizza dough.
Add the marinate chicken chunks.

Bake the pizza for about 20 to 30 minutes.
Remove the pizza from the oven and top the pizza with the sliced omelette.
Garnish with more fried ikan bilis, peanuts and cucumber slices.
