Brownies by Felin Goh

Ingredients
(A)
140gm butter
80gm Valrhona cocoa powder
1/4 tsp sea salt
180gm raw sugar
1/2 tsp vanilla extract

2 large eggs, cold
66gm unbleached plain flour
100gm or more pecan nuts - chopped and lightly toasted
Pecan nuts - for topping

Method
Preheat oven to 170C. Line the bottom and sides of an 8" square baking tin with parchment paper, leaving an overhang on 2 opposite sides.

Heat (A) over a pot of simmering water (double boiling method). Stir from time to time until the butter is melted and the mixture is smooth and hot enough that you want to remove your finger fairly quickly after dipping it in to test. Set aside until the mixture is warm.
Stir in vanilla extract.
Using a 'K' beater, beat in eggs one at a time, beating well after each addition.
When the batter looks thick, shiny and well blended, add in the flour and beat until well combined.
Stir in the nuts to mix well.
Pour batter into the baking tin and top with some pecan nuts to decorate.

INGREDIENTS :
3/4 pound (12 ounces) (340 grams) semisweet chocolate, coarsely chopped (can also use 2 cups semisweet chocolate chips)
1/2 cup (113 grams) unsalted butter, cut into pieces
3 large eggs, at room temperature
1 cup (200 grams) granulated white sugar
1 teaspoon (5 grams) pure vanilla extract
3/4 cup (95 grams) all-purpose flour
1/2 teaspoon (2.5 gram)baking powder
1/4 teaspoon salt

METHOD :
Preheat your oven to 350 degrees F (180 degrees C). Butter (or spray with a nonstick cooking spray) an 8 inch square (20 cm) baking pan. Then line the bottom of the pan with parchment paper.
Melt the chocolate and butter in a large heatproof bowl placed over a saucepan of simmering water. Remove from heat and set aside to cool to room temperature.
Meanwhile, in a large bowl whisk (can use a hand mixer) the eggs, sugar, and vanilla extract until frothy. Fold in the melted chocolate mixture.
