Kung Po Chicken Prata Pizza by Rontree Chan

Recipe for 2 pizza 

200g boneless chicken thigh ( diced)
2 frozen prata
6 slices ginger
2 cloves garlic (sliced)
20 dried chilli ( washed and seed removed)
3 stalks spring onion cut into 5 cm length
1 bowl shredded mozzarella cheese
3 Tbsp cooking oil
1 Tbsp Hua Diao Chinese Wine
4 Tbsp Woh Hup Kung Po Sauce
1 tsp dark soy sauce
1 Tbsp black vinegar
1 Tbsp light soy sauce
1 tsp sesame oil
1 tsp Hua Diao Chinese wine
1 tsp corn flour

1) Matinate diced chicken for 1/2 hour.
2) Pan fry frozen prata with little oil till it turns lightly brown on both sides . Remove from pan.
3) Spread thin layer of sauce on one side of prata surface ( leave remaining sauce for frying chicken). Sprinkle shredded cheese over the sauce surface. Set aside.
3) Using the same pan, heat up 3 Tbsp oil. Add ginger, garlic and half of spring onion ( leave half portion for garnishing) fry till fragrance.
4) Add dried chilli and chicken. Fry till chicken semi cooked, add the remaining sauce and 1 tbsp of Chinese wine. Cook till chicken is done.
5) Distribute cooked Kung Po chicken on prepared prata surface. Sprinkle some shredded cheeses over it.
6) bake in preheated oven on upper rack at 200 degree for 5-6mins.
7) Garnish with remaining spring onion to serve.
