Minced pork brinjal by Lena Lai


Cut brinjals into strips of 1 1/2". Put some oil in a bowl n put the brinjals strips in n make sure they r all well coated. AF at 180 for abt 7-10 mins depends how much u put in. I put 2 handfuls. Toss few times. Make sure tat the purplish r still there n do not over AF till burnt.

Heat wok with some oil n a dash of sesame oil, sauté ginger till fragrant, add in chopped salted fish, follow by garlic. Sauté till light brown. Add in minced pork (marinated with 2 tsp of soy sauce n a little corn flour) n give a few stir. Add in water, 2 tsp of oyster sauce n some salt. Add in the brinjals n give a few toss. If ur brinjal is a bit raw, u can cook longer. I just gave a few toss, add in corn mixture. When done, add in chopped spring onions. Dish out n garnish with fried shallots n cili padi.Add in the brinjal and toss to the softness that you wanted.
