Watercess with Pork Ribs Soup 排骨西洋菜汤 by Lily Tan



  Ingredients: (Serves 4)
- Pork ribs or soft-bone 400-500g
- Chinese watercress 1-2 bunch, washed thoroughly
- Red Dates 红枣 (handful - abt 10-12)
- 1 Sweet Date 蜜枣
- Sweet and bitter apricot kernels 南北杏 (handful, abt 10-12 each type)
- Salt

Steps:
1. Blanch pork ribs in boiling water to remove any scum so as to get clear soup later. Discard blanched water about 5-10 mins later.

2. Cut the watercress into half. Rinse dates and apricot kernels.

3. Bring a pot of water to boil, add watercress, pork, dates and apricot kernels. (Note: Watercress to be added only when the water is boiling vigorously else the soup will turn bitter.)

4. Cover lid. Boil with high heat for about 10-15 mins, then turn to med-low heat to simmer for about 30-40mins. Check and taste if veg stems are really soft. If not soft, continue to simmer. If soft and ready, add dash of salt, turn up high heat and boil for 1-2 min to fully dissolve salt. Ready to serve.
