Stir Fried Beef with Veggies by Jean Yeow

Ingredients:
A good marbled cut of beef steak to ensure that it's juicy and tender
Broccoli ( cut in florets)
Spring onions ( in 3-4 inch chunks)
Celery ( sliced)
Red Pepper ( in bite sized pieces)
Garlic ( minced)
Ginger ( sliced)
Soya sauce
Oyster sauce
Sesame Oil
Chinese rice wine
Black pepper
Dark soya sauce
Corn flour ( 2 tsp)
Olive oil

Method:
1) slice your beef into bite sized pieces. Marinate with oyster sauce, soya sauce, a dash of sesame oil, corn flour and crack a generous amount of fresh black pepper before marinating the meat for an hour.

2) Cut up all your vegetables.

2) Fry the ginger and garlic in some olive oil. Once golden brown, add the white stems of the spring onions and beef and broccoli.

3) Add a few tbsp of hot water and stir fry the beef and broccoli for 2 mins. Add in the rest of the veggies.

4) Once the beef is cooked, add in 1-2 tbsp of dark soya sauce in for colour ( depending on how dark your like your beef to look) and make sure the entire dish is coated evenly.

5) Add in a dash of Chinese rice wine at the very last min.

6) Serve hot with plain white rice.
