Steam Tofu egg topped with minced meat and prawn by Rontree Chan



Ingredients:
2-3 round tubes~ Egg Tofu ( cut off both end. Cut to 8-10mm thickness, make up to 24 pcs)
12 ~ prawns ( remove shell and devine)
Around 150g minced pork ( season with 1 tsp light soy sauce,1 tsp sugar, 1 tsp corn flour
1 tsp hua diao Chinese wine, some white pepper)
12 pieces of ham( cut with cookie cutter to round shape)
some green peas for garnishing

Sauce:
200ml water
1 TBsp Light Soy Sauce
1 ½ TBsp Oyster Sauce
1 Tsp sugar
Some corn flour water for thickening.

Methods:
1) Mash the unwanted end of egg tofu with minced pork and mix well with seasoning till form gluten or become sticky.
2) Lightly apply thin layer of oil on steaming tray.
3) Place the tofu carefully on the steaming tray, top with a round ham and another layer of tofu.
4) Scoop a small dollop of minced pork add on the tofu and lightly press in a prawn and one green pea.
5) Send for steaming when the water is boiling. Cover with lid and switch to medium heat. Steam for around 5-7mins.
6) While steaming, prepare the sauce.
7) Pour all the sauce ingredients in a sauce pan except corn flour water. Cook till boiling, check its taste, add water or soy sauce if necessary. Lower low heat and add corn flour water for thickening.
8) Carefully remove the tofu by a offset scraper. Lay them on serving plate and drizzle in with sauce.
