Prawn & Egg Tofu in Chilli Crab Sauce by Lily Teo

Serves 3 - 4

1. 700g prawns (remove shells, devein and marinate with a pinch of salt)
2. Egg Tofu x 2 tubes
3. Water 350ml
4. Corn flour
5. Garlic - minced or blended
6. Oil
7. Chilli Crab Sauce x 1 bottle
8. 1 Egg (lightly beaten)
9. Coriander leaves and chilli for garnishing

1. Cut egg tofu into rounds. Fry lightly in heated oil. Drain oil in paper towel.

2. Heat oil in a frying pan. Add garlic and fry till light golden.

3. Add prawns and fry till they turn red. Add Chilli Crab Sauce.

4. When sauce starts to simmer, add corn starch solution.

5. Add fried egg tofu, turn up to high heat till fragrant.

6. Turn off heat and add egg. Mix.

7. Garnish with coriander and chilli.

8.Serve with steamed or fried Mantou.
