Laksa Potato Croquettes by Patricia Bebe

500g Potatoes 
2tbsp Dancing Chef Laksa Paste
1 Egg ( beaten )
1tbsp Corn Flour
1/2 bowl Bread Crumbs
A handful of Laksa leaves ( chopped )

  1. Boil potatoes till soft, drain & cool then peel off skin. 
  2. Mash potatoes & mix with Laksa Paste, Laksa leaves & corn flour. Mix well then shape into bite size balls.
  3. Dip balls into beaten egg then coat with bread crumbs & deep fry over low fire till golden brown. Drain & serve.
