Steamed rice flour cake by Joanne Sim


140GM Rice Flour
110GM Sugar - Either white or brown depending on your preference ( I used 100gm)
300ML Water
1/2 TSPN Instant Yeast
1/4 TSPN Salt
1/2 TSPN Oil
3 Pandan Leaves


In a bowl, combine 150ml of water with the rice flour and salt. Set aside
Boil sugar and remaing 150ml of water. Add in the pandan leaves. Once completely melted, remove pandan leaves and set syrup aside to cool.

Mix 1/2 tspn of instant yeast with 1 TBSPN of warm water. Mix well and pour into the rice flour mixture.

Once sugar syrup is cool enough to handle, pour it into the rice flour mixture. Leave it somewhere warm covered with either cling flim or towel and set it aside for 2 hours for yeast to react.

Grease a 6 inch pan, set in steamer together. Once its boiling (I use med - hi heat) Gently pour in the rice flour mixture and steam for 20 minutes.

Leave it to cool about 5 minutes and remove from pan. slice and enjoy.
