XO Fried fish Soup topped with Egg Floss by Terese Teo


Fish soup

Boiled a handful of soya beans & ikan bilis with 1 liters of water for about 30mins.Then strain.

Fried fish
Season fish w some salt & pepper.
Then add one more egg to the seasoned fish.
Coat it w corn flour
Fry till golden brown

To complete the fish soup. Add tomatoes, tofu, xiao bai Cai. Add some salt, sugar to taste. Bring it to boiled. Add evaporated milk & XO off fire.


Egg floss
Ingredient:
3eggs
A dash of hua tiao jiu
200ml of oil

Heat up oil.Beat all the ingredients then pour thru a colander style scoop. Fried till golden brown.
