Brinjal with Sambal Chilli by Jessie Koey‎


Ingredients

3 long brinjal - washed and sliced into halves, cut into 3 sections
1 tsp tamarind paste (mixed with 1 tbsp water)
1 big onion - cut into ring
1 tsp belacan powder
Salt, sugar and chicken powder

Pounded Ingredients

4 shallots
3 garlics
4 red chillies (use chilli padi if you want more spicy)
a handful of dried shrimps/ikan billis

Method

1) Heat oil in a wok and deep fried brinjal till well cooked. Drain and arrange on a serving plate
2) Heat 1 tbsp oil in a separate pan, and saute pounded ingredients and belacan powder till dried and aromatic. Add onion rings, tamarind water, salt, sugar and chicken powder. Stir- fry for abt 1-3 mins. Ladle on top of the cooked brinjal and serve with white rice.
