Chilled Marinated Brinjal by Rachel Teo Ö‎


2 regular brinjals (sectioned into 2" long cuts)
1 clove garlic (chopped)
1 red onion (chopped)
2 stalks spring onion (cut)
2 tbs sugar
2 tbs white vinegar
3 tbs light soy sauce
Drinking water

Steam sectioned brinjals for 3-5min till cooked.

Mix the rest of the ingredients, add some drinking water or some more flavouring ingredients to the mixture to balance the flavour to your desired taste.

Tear steamed brinjal up, add to the mixture, chill in fridge till ready to serve.
