Steamed herbal chicken with essence of chicken by Ellena Guan‎


Ingredients
1/2 portion of chicken, but into 8 portions
1/2 tablespoon grated ginger juice
1/2 teaspoon of sea salt
1 tablespoon cooking / rice wine
Some red dates and wolfberries
Some cordyceps flower (虫草花)
1 bottle essence of chicken
Spring onion, optional

Method
1. Clean the chicken, cut into portions then marinate it with ginger juice, salt and cooking wine in a big bowl (suitable for steaming) for at least 10 minutes.
2. Top with red dates, wolfberries, spring onion and cordyceps flower and 1 bottle of essence chicken.
3. Steam over medium heat for at least 1 hours or more depend on your preference of meat.
