Pengat durian by June Wee

500g durian pulp
125g gula melaka
100g water
Pandan leaves
250ml coconut milk
Pinch of salt

Boil gula melaka water and pandan leaves over low heat. Stir gently. When the gula melaka has completely melted, strain the syrup.
In a pot bring coconut milk to a boil. Lower flame and pour in gula melaka syrup. Add salt and durian pulp.
Stir gently until everything becomes a homogenised and thicken consistency. Turn off flame and set aside.
