Pasta Primavera by Jason Tay



Ingredients
Zucchini, sliced into strips
Capsicum, sliced into strips
Broccoli, cut into florets
Frozen peas, thawed
Red chili, deseeded and cut into strips (can leave seeds inside if you want some heat.)
Olive oil
Garlic, minced
Dried oregano
Salt and pepper
Extra Virgin Olive Oil (EVOO)
Parmesan cheese, grated
Pasta of choice

Method
1. Cook pasta according to instructions on packet minus one minute. (Eg. If packet says done in 13 minutes, means cook it for 12 minutes and remove from water)
2. 1 minute before the pasta is cooked (using example above then at the 11 min), add the broccoli to the pasta water to boil together. Remove from water together with the pasta. Reserve pasta water.
3. Heat pan with olive oil and fry garlic until fragrant. Be careful not to burn the garlic.
4. Add zucchini, capsicum and peas and fry for about 2-3 min. Season with dried oregano, salt and pepper.
5. Add pasta, broccoli and sliced chili to pan and stir for 1 min. If too dry, add a little of the pasta water. Season with more salt. Take off the heat.
6. Pour a lug of EVOO and stir to mix before dishing out on plate.
7. Grate some parmesan on top and freshly cracked black pepper before eating.
