Chinese Spinach with 3 Assorted Eggs 三色苋菜 by Meng-Choo Tan


Chinese Spinach - 1 bunch plucked and peeled
Salted egg - 2
Egg - 1
Century Egg - 1
Garlic - 1 clove chopped
Chicken Stock - 1 cup
Corn starch water

1. Separate the salted egg yolks from the white
2. Spray some water and microwave them at 10s + 10s. They will be partially cooked. Use a spoon and smash them.
3. Heat wok and add oil.
4. Sauté the garlic
5. Add the salted egg yolks
6. Add the spinach stems n fry until soften.
7. Add the spinach leaves
8. Add the chicken stock and dash of pepper. Wait for it to boil.
9. Quickly add the salted egg white, egg and corn starch water. Stir and turn off the stove.
10. Serve while it's hot.
