Mapo Tofu by Lucinda Lau


Ingredients
1 box silken tofu ( Pat dry and cut into cubes)
200gms minced pork
1 spring onion ( chopped)
1/2 tsp minced garlic
1/2 tsp minced ginger

Sauce
2 tbsp doubanjiang
1 tbsp oyster sauce
1/2 tsp sesame oil 1/2 tsp sugar
1 tsp cornflour mixed with 2 tbsp water
Mix all the above in a bowl.

Method
Fry the ginger and garlic with a tbsp of oil. Add in the pork and fry until it turns pink, pour in the seasoning and 200ml of water. When it starts to boil add in the tofu and spring onions, let it boil for 2 mins. Then add in the cornflour mixture. Mix well and turn off fire.
