Black pepper beef fried rice by Rontree Chan


For 4 servings

Ingredients
4 bowls of rice.
300g of beef cut into strips marinated with 1 Tbsp of soy sauce, 1 Tbsp of white rice wine, 1 Tsp sugar, 1/2 Tbsp corn flour + 1 Tbsp water, 1/2 egg white. for 15 mins.
2 Tbsp of black pepper corn pan fried till fragrant, pound to sandy texture, add 2 Tbsp of Oyster sauce, 1 Tbsp of soy sauce, 1 Tbsp sugar, 1/2 tsp salt, 1Tsp chicken powder, 2-3 Tbsp water.
1 White Onion cut to strips
1/2 green bell pepper cut to strips
1/4 red bell pepper cut to strips
1 Tbsp minced garlic
2 eggs + 1 yolk + 1/2 egg white ( beaten)

Method
Stir fried the beef with oil till 3/4 cooked, dish out.
Stir fried egg with oil till 3/4 cooked, dish out.
Stir fried Onion, green and red bell pepper with little oil till fragrant. Add in minced garlic and fry for 1 min. Add in rice and egg, fry for 3mins. Add in beef and black pepper sauce fry till all well mixed.
check the taste to adjust with soy sauce and salt, if too dry add some water or stock.
