Minestrone soup by Bee Ling Ong‎


A can of tomato soup
A can of chopped tomatoe
A can of four beans
2-3 celery
2-3 carrot
2-3 zucchini
1 onion - (chopped)
2-3 cloves of garlic (chopped)

Sautéed the onion and garlic, then add in the veg. ( u can used any veg u like) ( cut the veg into bite-size) once brown add in chopped tomatoe, follow by tomatoe soup. Add in 3 cups of water/ stock and simmers it. Drain the beans and rinse under tap and add into the soup. U have to monitor the level of liquid and how dense you want the soup to be. Add salt and pepper for taste. (grated Parmesan cheese and chop parsley are optional)
