Fragrant Prawns by Lena Lai


Clean prawns n marinate with 1 tbsp of dark soy sauce n 2 tbsp of soy sauce, a little salt n sugar n pepper. Finely chopped 1 tsp ginger, 2 tbsp shallots n 1 tbsp garlic. Cut spring onion into 2cm long, slice 3 cili padi, 2 sprigs of curry leaves. Add some sesame oil n normal oil, sauté ginger, follow by shallots n lastly garlic. Add in curry leaves n prawns, reserve the soy mixture. Stir fry till prawns half cook. Now add in the balance soy tat was used to marinate the prawns, add in 1 tbsp of oyster sauce, chili sauce n tomato sauce respectively. Add salt n sugar to taste. When prawns are almost fully cooked, add in spring onions n cili padi n give a toss. Ready.
