Assembled fruit tarts by Teresa Theng


I bought the puff pastry from Phoon Huat and bake at home and make the custard myself.
Puff pastry from PH:

Prick with a fork, egg wash and bake blind at 180°C for 30 min.

 Custard:
25g unsalted butter
115g milk
1 tbsp sugar
25g flour
Vanilla essence
1 yolk

Melt butter over low flame, add sugar and flour and stir till its smooth.

Slowly add milk and cook till smooth. Add yolk and of flame aft ard 5s.

Flavour with vanilla.


Assembly:
Spread the cooled custard over the baked pastry. Arrange fruit slices, finish with mirror glacé from PH.
