Wasabi mayo prawns by Kelly Pang


10-15 fresh Medium/large size prawns
1 egg white
Oil for deep frying
3 tbsp cornflour
4-5 tbsp mayonnaise
1 tbsp condensed milk
2 tsp wasabi
Dash of lemon juice
Ebiko or Tobiko
* adjust more sauce or wasabi to your liking*

To cook:
1. Remove shell & devine prawns. Drain.
2. Dip prawns in egg white. Coat with cornflour.
3. Deep fry prawns for about 3 mins or until crispy. Let prawns rest on wire mesh to drip extra oil.
4. In a separate dish, combine mayonnaise, condensed milk, wasabi & lemon juice.
5. Toss fried prawns with wasabi mayo evenly.
6. Top with tobiko.
Or you may oso mix some into the wasabi mayo mixture.
