Apply pepper..bbq sauce and honey. Marinate for at least 4hrs. Best is over night. We called it mixture A.

Stuffed chopped vegetable includes:
2 Onions..shallots.. spring onion.. leeks.. red & Orange pepper. No need marinating..allowing the natural sweetness of those veg to ooze from baking.

Baking time: It is approximately 2hrs (+/-)..depending on each oven. Adjust top and bottom heat for baking.

Preheat 250deg for 6mins Turn to 200deg and bake for 30mins Flip the bird and continue to bake at 175deg for 30mins Bring the bird out and apply another few layers of mixture A on the top skin and bake for 25mins at 160deg Bring bird out again and flip it to the other side ..apply mixture A and continue to bake for 25mins at 160deg. The skin should be golden brown and crispy now. Set it aside for 30mins before serving.
