Prawn Dum Briyani by Cynthia Joseph Selvarajoo


Recipe:
(For the prawns)
1 kg prawns (trim wash and marinate with salt and turmeric)
3 tbsp magarine butter
2 tbsp olive oil
2 big onions (chopped)
1 big ripe tomato (chopped)
Coriander leaves
Mint leaves
2 tbsp baba meat curry powder
2 tbsp briyani masala
1 tsp termeric
1 tbsp baba chilli powder
2 tsp salt
3 tbsp yogurt
2 cinnamon &cloves
2 tsp ginger garlic paste
A bit of curry leaves

(For briyani)
1 kg briyani rice(soak for 1 hr)
2 tbsp olive oil
2 Cinnamon sticks and cloves and bay leaves
2 1/2 tsp salt
Daun pandan leaves

(Garnishing)
I cup mix nuts (cashewnuts ,almondnuts & raisins)
Coriander leaves
Mint leaves

Method;
Wash the soaked basmati rice carefully and put enough water to cook.
Pour in the olive oil , the cinnamon stick, cloves, bay leaves and salt.
And cook the rice 80%.
Drain the water.
While cooking the rice prepare the prawns.
In the wok pour the butter and oil and fry the marinated prawns. After it turn out crispy put in the cinnamon sticks gloves and Daun pandan leaves and curry leaves. The put in the onions and tomatoes and stir well for 5 mins. Then put in the ginger garlic paste and stir for another 2 mins.
Then put in all the spices, salt and yogurt. Cook for 10 mins and pour a bit of hot water. Cook well and Garnish with coriander and mint leaves.

In the rice cooker first put in all the cooked prawns together with the gravy. Then on top put the 80% cooked basmati rice and finally garnish with fried nuts, coriander leaves and mint leaves.
After cook
Sprinkle some orange food colouring(mix with hot milk or plain water) on top of the cooked rice.
Serve and eat with curry.
