Home-made XO sauce by Chew Gin


I got the recipe from the website of this Taiwanese blogger - Carol Hu. But her site is in mandarin. I have tried to translate into English. Pardon me for my poor translation:

Ingredients
Dried scallops150g
Dried shrimps 50g
Dried flatfish30g,
Garlic 60g,
Shallots 60g,
Chilli padi 40g,
Peanut Oil 350cc

Sauce:
Light soya sauce 50cc
Oyster sauce 50cc
Chinese cooking wine 30cc
Sugar 2 tablespoon

Steps:
1. Rinse dried scallops. Put them in a bowel and add enough water to cover them. Steam for 30 mins.
2.after steaming, wait for the scallops to cool down slightly before shredding them. Try to shred as fine as you can.
3.dried shrimps soak in warm water for 3 mins.
4.use food processor to chop the garlic, shallots, chilli padi, soaked dried shrimps and dried flatfish.
5.heat up the wok using medium heat and add oil.
6. Fry the shredded scallops for 5 mins until slightly golden brown.
7.add the chopped dried shrimps and flatfish. Continue to fry for another 3 mins.
8.add chopped garlic, shallots and chilli. Fry until it has a nice fragrance.
9.add in all the sauces and tune to small heat and fry for another 3 mins.
10.store in clean containers and keep refrigerated after it cools down.
