Home-made Chicken Essence by Mary Koh



.chop 1 whole organic chicken into "bite size", smash bones with a tenderiser hammer
.rinse abt 20 wolfberries
.boil water in a steamer/pot first, remember to put a steaming rack
.in the mean while, put a small soup bowl face down in a huge bowl.
.Sprinkle wolfberries around the inverted bowl
.place the painstakingly squashed chicken around the inverted small bowl
.add 3 tablespoons of filter or boiled water to the chicken, drizzle evenly (impt)
.once water boiled, put whole huge bowl on the steaming rack, cover the huge bowl with a plate then cover with the pot cover.
Big fire 10min, the rest of the 6 hrs all small fire. You can double boil btw 4-8 hrs. Up to u. Pls top up water if its running low but do not attempt to lift the plate hor!
.after 6 hrs...open cover, allow to cool for a few min
.remove all dry up chicken. I use my hand to push down the small bowl slightly just in case I push abit and the essence flow out whilst my chicken are still inside. I will cry big time! Lol!
.now is the moment of truth...use a spoon to lift the small bowl, all the essence will flow out...!

Note:
.do not rinse the smash chicken
.the purpose of the 3 tablespoon of filtered/boiled water is to lured more chicken essence from the chicken. Yes...this is the trick (wink...wink..)
.why the small inverted bowl? All the essence squeeze from the chicken will be "suck" into this small bowl.
