Tiger Prawns w/Glass Noodles by Janice Looi


Ingredients:

80g glass noodles,soaked in hot water for 10 mins (I like softer, so I boiled for awhile)
Toasted peanuts, chopped
Coriander leaves, roughly chopped
Shallots, sliced & fried till crisp
10 to 12 prawns, boiled n shelled
Chilli Dressing (mixed well)
5tbsp bottled Thai sweet sauce
2tbsp lime juice (adjust your own taste)
2tsps fish sauce
1tbsp peanut oil
1 large red chilli (I use chilli padi)
Salt & pepper

1. Pour chilli dressing into the glass noodles and refrigerate for at least 20mins.
2. Toss the glass noodles with toasted peanuts, coriander leaves and fried shallots.
3. Garnish and top with cooked prawns. Done & enjoy!
