Thai Red Ruby by Eileen Koh

 
For the coconut milk,
Put four tablespoon of sugar(depend how sweet you want) and three pitch of salt with 100ml of hot water and stir it well. Follow by 250ml coconut milk and mix it well. Put it in the fridge to let it chilled.

For the red ruby,
Cut eight water chestnut into small cube. Follow by colour it by using food colouring red or green (your own colour preference, also can use strawberry colouring). The little cube of chestnut coat well with colouring. Follow by pour some topical flour on it. Make sure every single piece coat well with the flour. Boil a pot of hot water. Pour all the coated water chestnut into the pot. Once it is cooked, you will see all the red ruby start to float up on the surface. Once done, Pour away the water.. And put the red ruby with the coconut milk. Done! Best is put the fridge at least one hour before serve or you can put crashed ice or ice cubes. Enjoy!
