Lotus root soup ~ 蓮藕湯 by Lily Chew


The ingredients I used
1) 五花 排骨- 1 kg (I din use soft bone, 软骨 this round)
2) lotus root - 1 kg (before removal of mud & cutting off the 2 ends)
3) carrot - 1 pc (can put more)
4) dried scallops - 6~8 pcs
5) red dates - 30 pcs
6) wolf-berries - 3 full tablespoon.
7) 4.5 - 5 litres of hot water
8) 1/2 teaspoon of salt for flavouring.

4.5 ~ 5 litres of hot water then boil for 0.5 hr & simmer for another 2 hrs, good for 6 ~ 8 paxs ... The soup is tastier the longer you simmer.
