Double skinned milk/*双皮奶* by Jennifer Lu


1 box milk (small)
2 egg whites
1 tsp egg yolk
3 Tbsp sugar
3 Tbsp water
Several drops of white
vinegar

1. Separate milk into 2 portion. Steam for 10mins (or microwave for 2mins).Set aside to let it cool and there should be a thin milk skin on the surface.

2. Slightly put out the milk skin with a fork. Keep it for later use.

3. Heat sugar and water in microwave until it dissolves. Slightly beat egg white and egg yolk. Add in the sugar water and white vinegar.

4. Pour the egg mixture(Step3) into the milk(Step2).Place the milk skin on the top of the mixture.

5. Cover bowls with microwave use safe cling wrap and steam over medium heat for 8 mins. Cool in the steamer for 2 mins. Serve.
