Essential to have good chicken stock which for me is $3 chicken bones, a handful of dried Ikan bilis and soya beans boiled under high heat for at least 1 or 2 hours.

Thereafter, remove all the items using a sieve until the soup is clear. Boil all your preferred ingredients such as chicken thigh, fish, prawns, fish cake, crab stick, cai xin etc. Cool each ingredient separately and once it is cool, remove it so that it doesn't over cool. The soup will now taste even better.

Add oyster sauce, pepper, soya sauce to your desired taste. Thicken the soup slightly with corn flour until a slightly thick sauce is created. Now comes the lovely part, crack 2 or 3 eggs separately and whisk them before hand. Once the sauce is boiled for a few minutes, off the fire and add the whisked eggs. Stir slightly and you will have the tasty thick sauce for the noodles.

I always place the cooked ingredients on separate plates and each serving plate has a piece of the fried noodles. We will just choose our own favourite ingredients and place them on the noodles. Pour the hot sauce over it and it is ready to serve.
