Sabsuka by Cindy Angelique Chia

300gram mince beef
2onions
2 tomatoes
3 cloves garlic
3eggs
1 can tomato puree
4spoons ketchup
Salt
Pepper
Parsley

Chili paste
Minced onion, garlic, ginger paste (for this I bought from the wet mkt from the indian spice stall, $1 worth but I used about half)

Marinate beef with dash of salt, pepper, scoop out the onion, garlic n ginger paste n mixed throughly. Leave for 30mins

Dice onions, garlic n tomatoes

Heat pan with oil, add in 90% of onions, fry till soft.
Add chili paste, fry for about 3mins.
Add in minced beef, tomato puree, ketchup and 1 cup water. Fry till almost cooked.

Add in 90% dice tomatoes. You can add more water if needed. It should be semi wet like a paste. Fry for about 5mins.

Season with salt and pepper. Can add a bit of sugar.

Scoop into a baking tray. Dig holes and crack eggs in. Garnish with remaining onions n tomatoes. Put in 180degree oven and bake for about 10mins (you can adjust baking time according to how you want the eggs to be done)

Garnish with parsley and serve hot!

Some recipe I saw added capsicum and mixed vegetables. They also garnish with green chili. You can try that too!
