Portuguese Egg Tarts by Jo R Zhu

There r 3 ways to get the tart shells:
1) make from scratch
2) make from ready to bake puff pastry
3) buy readymade tart shell

1) to make the tart shell:
200 gm flour
25 gm butter
1/8 tsp salt
110 gm water


This quantity can make 20-24 tart shells.

Mix the above together into a dough, divide into 2 portions, cover & rolling into a square sheet (hence 2 square sheets).  Put in fridge for 20min. Bring out to roll into a square sheet as thin as 3mm, brush pastry margarine on it, sprinkle cinnamon powder evenly on it. Roll up the pastry sheet like making a swissroll. Cut into 10 portions, take 1 portion with the twisting side facing up & down, use a rolling pin to flatten it, place it into a disposal aluminium tart shell cup, press the pastry gently from bottom to up in circular motion, the pastry need to be slightly taller than the cup, use a folk poke some holes on the ready made tart shell.

2) buy a ready to bake pastry sheet from supermarket:
Place a pastry sheet on desk top sprinkle with some flour, brush some butter on the surface, sprinkle cinnamon powder evenly, then roll the sheet like swissroll. Cut into 8-10 portions depending on the size of the pastry sheet. Continue the same as (1) on the last few steps.

3) the lazier & fastest method: buy the ready made to bake tart shells! Haha!



Filling recipe for about 20-24 tarts:
140L dairy whipping cream
500L milk
100g sugar (I used only 80g)
2 tbsp corn flour
3 egg yolks
1/2 tsp vanilla essence
method:
Whisk all ingredient in a pot except the vanilla essence. Bring to stove to boil in medium heat till smooth & slightly thicker. Put aside to cool & add in the vanilla essence. Preheat oven to 230•c. Only take out the tart shell from freezer when ready to pour in the filling & put in oven to bake, do not soak the filling in the tart for long. Bake tarts at 220•c for around 25-30min. When u see the surface turn brown & bubbling, it is almost done. U may want to turn the tray of tarts to ensure evenly baked throughout the same tray. Monitor the temperature as different oven function differently in same preset temperature.
