Crabmeat Egg Vermicelli by Michelle Heng


Ingredients
60g tang hoon (soaked and drained)
100g crabmeat
1/3 carrots (coarsely grated)
2 eggs (beaten with a pinch of salt)
2 tbsp soy sauce
1 tbsp oyster sauce
1/2 small bowl water
4 tbsp oil
Spring onion (garnishing)

Steps
1. Stir fry carrots till soft with 2 tbsp of oil.
2. Add in crabmeat and stir fry till about half cooked.
3. Combine the water, oyster sauce and soy sauce then pour in the mixture into pan and add tang hoon, stir fry till sauce almost dries up.
4. Push all the ingredients aside to make a well in the pan.
5. Add remaining oil and egg. Wait till egg almost 70% cooked, then mix and fry with the rest of food in pan.
6. When all ingredients are well mixed, turn off the heat and scoop food into a bowl.
7. Place another plate on bowl and turn it over, sprinkle some spring onions and serve.
