Chicken Soup with Apple & Snow Pear by Doreen Tamjiak

(Serve 2)

*All ingredients are based on estimation. Do feel free to adjust according to your preference.

Half Chicken (you may use other chicken parts)
1 red apple (I used 2 mini ones this time)
1 snow pear
8 red dates
1 tbsp wolfberries
1-2 tbsp apricot kernel 北杏 (optional)
2-3 dried scallops - optional
(I used 8 small ones)
1 tsp salt
3 litres water

1. Peel and core apple and pear, and cut into cubes.
2. Blanch chicken.
3. Fill a pot with 3 litres or 2/3 full of water.
4. Put in all ingredients and bring to boil. Remove the oil on and off from the surface.
5. Boil for 10 mins and turn down to low-medium heat to simmer.
6. Simmer for at least 1 hour or until ingredients are soft.
Done. Easy peasy. Enjoy the natural sweetest of this soup.
