三色蛋苋菜 by Jo R Zhu



Ingredients:-
1) 1 raw chicken egg
2) 1 boiled salted egg (peel shell & cut)
3) 1 century egg (peel shell & cut)
4) Spinach (2 packets)
5) Chicken Stock approx 2-3 cups
6) Corn flour + water (optional-for thickening the soup base)
7) some chopped garlic
8) some cooking oil


Steps:-
Heat up pan, add oil, then add in chopped garlic to fry awhile, add in spinach, fry & add in chicken stock gradually (do not add too much as this is not a soup dish). Add in boiled salted egg, stirred fry till chicken stock boiling, (may add in corn flour water here if u like thicker gravy) then add in the raw chicken egg, cover pan for 10 seconds & switch off stove fire.
Serve on a shallow bowl & add the century egg on top.
Ready to serve & enjoy!
