Stew Prime Ribs with Radish and Carrot by Aida Leong


Ingredients:
1kg prime ribs
300/400g radish
300/400g carrot
3 slices ginger
1 big onion
3 cloves garlic
2 tbsp Lee Kum Kee Chu Hou paste
600ml water

Seasonings
2 tbsp chinese cooking wine
1 tbsp light soy sauce
1 tbsp oyster sauce
1tbsp brown sugar/20gm rock sugar
1 tbsp corn flour

Method
1)Blanch the prime ribs.
2)Heat pan, add 2 tbsp olive oil & sauté ginger, garlic & Chu Hou paste till aromatic.
3)Add in prime ribs & stir well.
4)Add in onion, radish, carrot & stir well.
5)Add seasonings & water. Bring to boil.
6)Reduce heat to medium & simmer until meat tender & vegetables soften.
7)Serve hot.

I used cast iron casserole to cook the above. After step 5, I let it simmer for about 30 minutes. Then put the whole casserole inside the oven & let it cook for 1 hour at 180C
