Spicy Pepper Crab by Saraswathy Balakrishnan


Ingredients:
1 packet frozen snow crab
1 cup dry red wine
50g grounded black pepper

1 cup finely sliced shallots
1/4 cup finely minced Fire Roast Tomatoes Can
2tbsp ginger garlic paste
1/4 cup chopped coriander leaves
1cup vegetable oil
Salt to taste

Method:
First crack the crabs using the back of a heavy spoon. Marinate them with red wine and 1tbsp of grounded black pepper for 3 . Add 1 cup vegetable oil in a large frying pan and shallow fry the crab pieces.Drain and keep aside.
Coat a heavy non-stick wok with 4tbsp oil and add ginger garlic paste. Once the oil starts to separate add the chopped onions and tomatoes. Saute till they become well fried and translucent. Add the grounded pepper and the fried crabs. Let the crabs saute really well in oil and grounded pepper. Add the chopped coriander leaves and remove from flame. Serve hot with toasted french loaves or buns..
