Salmon Pie by Rontree Chan



Ingredients:
1 pc of 5"x5" puff pastry sheet cut into half diagonally (2 triangle pcs)
1 pc of toasted bread for the base or ( i used a waffle made from happycall waffle iron)
some egg wash
1 egg yolk

filling:
1 small pc of poached salmon cut into big chunk
mixed with 3 spears of diced asparagus
some mixed veggie peas
3 cherry tomatoes diced
1 TBsp creme fraiche
1 Tsp lemon juice
some salt, pepper and sugar
mix well all the filling.

Method: preheat oven 190dc
place the filling on the square toast.
place 1 pc of cling film on the filling and shape it to a semi sphere shape.
use finger to create a dent at centre, take out cling film.
place the egg yolk in it.
cover with 2 triangle pastry sheets over lapping each other slightly.
brush pastry sheet with egg wash.
bake in oven on 190dc for ard 13-15mins till the surface is browned.
I prepared the filling and the bread (or waffle which i used) the night b4. All i need is just assemble and send to bake for a fast easy brekkie. The Salmon inside is moist and juicy with the runny yolk.
