Pineapple Tarts by Chris Chua




Ingredients:
300g plain flour
200g salted butter
2 egg yolks
2 tbsp cold water
1 beaten egg –but can do later for brushing the ball

Method:
Sift flour and put in soften butter,cold water and egg yolks.
Knead to form a dough.If too soft,add a little more flour.
Put in the fridge to chill for half an hour.
Meantime, heat the oven at 200oF
Take dough out and roll out a little knob.
Put ready made pineapple paste into dough and roll it into a ball.
Brush with eggwash before putting into the oven to bake for 20-25 mins (middle rack)
Cool it before keeping it in containers.

I've tried 3 recipes on the same day, I think this is the best. I prefer not too hard n it melt in d mouth feel. The other 2 recipe with the 2 whole egg n slightly more flour seems abit hard.
