Melon Luo Han Guo with Longan & Snow Fungus Tong Shui 冬瓜罗汉果龙眼雪耳甜汤 by Yvonne Mah



1. Soak snow fungus in water until softened. Discard water. Trim off the firm part in the centre and tear the fungus into smaller pieces. Wash in running water to remove any dirt.
2. Wash dried longan, honey dates & figs, set aside.
3. Wash the luo han guo. Crack them and put into a filter bag.
4. Remove winter melon seeds & skin. Cut them into desired size and set aside.
5. Put snow fungus, winter melon, luo han guo, honey dates, figs and water in a pot. Bring to a boil and then simmer for 60-90 mins. Add longan and continue to let it simmer for another 30 mins.
6. Add rock sugar to taste and stir until the sugar is fully dissolved. Remove from fire. (Optional: You may add some wolfberries at this stage when the soup is still hot.)
7.Serve warm or chilled.
