Fish Soup by Shen Cui Ling


My stock consists of
1 medium carrots
1 large onion
50g ikan bilis
2 small piece of ginger
2 red dates
6 chicken leg bones
then add water till cover the ingredients .. when I cover water in the pot with ingredients .. water level was at 1.8 liters .

After cooking for 1 hour or so it became 4 cups only (do take note about the water level dropping).

Alternatively you can just use 100g of ikan bilis with 1 liter of water , 1 to 2 slices of ginger n 2 red dates .. stock likely to become 500 ml after simmering for 30 mins.
