Chilli crayfish with egg tofu by Carina Khong


Sauce :-

I used pkt chilli/tomato sauces tat I hv at home but u can use ur bottled ones.
- Tomato ketchep (ard 1.5 cup)
- Chilli sauce, can use sambal or sweet chilli sauce deps on the level of spicy u like. I used 5 small pkts cos one of my boy cant take spicy (ard 2 tbsp)
- Sugar (ard 2tbsp)
- Light soya sauce (1 tsp)
- Water (2 cups)
- corn flour (2tbsp mixed wz some water)
- eggs (2)
- oil (1tbsp)

1) Mix chilli sauce, tomato sauce, soya sauce n sugar in a bowl n set aside
2) deep fried cray fish coated wz some corn flour till it turns red
3) deep fried egg tofu in hot oil
4) leave some oil in the wok, pour in sauces n fry for a while. Add water, bring to a boil.
5) put in crayfish, cook for ard 5 mins covered in sauces. If u want more gravy can add more water n ketchep/chilli.
6) add corn flour mixture to thicken the sauce
7) add the egg mixture (beat a little)
8) add beancurd n stir slowly
9) Serve wz parsley n spring onions.
