Cantonese style porridge:- Minced pork, Dried scallop & frozen scallop, century egg & you tiao by Linda Lau


4 serving

1) soak the rice with water for 3 hrs( i use 11/4 cup of rice )

2) after 3 hrs, rinse the rice & put 3 litres of water, 1 chicken cube & 20 small dried scallop to cook at high heat

3)when the porridge is cooking, turn to low heat & simmer till the rice disintegrate for 45 mins... at the same time, need to stir constantly to prevent burn at the bottom of the pot... If it's dry, add abit of water until u get a smooth texture

4) put in the pork, frozen scallop to cook... Almost done then add in century egg & stir a little while & off fire

5) serve immediately, garnish with spring onion & shallot & you tiao...
Can consume

I will alway prepare fresh shallot.
