• 60g glutinous rice flour
• 60g tapioca flour
• 500ml water
• 120g caster sugar
• 30g gelatin powder
• ½ tsp banana essence
• 1 tbsp cooking oil
A small drop of food coloring of your choice (optional)
Sprinkle of white sesame seeds (optional)
1. Combine flours and water in a saucepan. Add in sugar and gelatin powder to form a liquid batter.
2. Cook the batter over low heat to form a soft dough. Stir constantly, otherwise mixture may get burnt at the bottom. Stir in essence and cooking oil.
3. Spread soft dough into a square plastic container, leave to cool.
4. Refrigerate for ½ hour. Cut into small pieces (a plastic knife may be useful). Toss with extra glutinous rice flour in a separate bowl. Store in fridge.

Ingredients:
700g glutinous rice flour
600g Sugar
800ml Water
1/2 tbsp banana essence
100g cooked rice flour
Method:
Mix glutinous rice flour, sugar, banana essence and water till the sugar dissolves. Pour the mixture into greased baking tins and steam at medium heat for about 20 minutes or till it's cooked through. Leave to cool. Toss in the cooked rice flour and cut into small pieces.
