Airfried Meatballs by Michelle Heng

Recipe adapted from Philips Airfryer Cookbook (China version)

Ingredients
300g minced meat
12 canned rambutans

Seasoning
1/2 tsp salt
1 tsp pepper
2 tsp corn flour
2 tsp garlic powder
1 tbsp sugar
1 tbsp water
2 tbsp soy sauce
2 tbsp oyster sauce

Steps
1. Mix the minced meat with all the seasoning thoroughly, use chopsticks to stir in one direction till the minced meat becomes gluey.
2. Scoop a tablespoon of meat onto palm and wrap a rambutan in the centre to form a ball.
3. Refrigerate the ready made meat balls for at least an hour
4. Airfry the meat balls in a preheated airfryer at 180 deg C for 15 mins, turning once during half time. I cook the meatballs in the baking tin.
5. Serve hot & bon appetit!

Notes
1. The original recipe uses quail eggs which I have replaced with canned rambutans as my guinea pigs do not like quail eggs. This fruit is chosen as the rambutan flesh mimic that of egg white while the pineapple the yolk.
2. Actually can stuff any items in the meatball accordingly to one's desire.
3. If you like to glaze (or sweeten) the meatballs further, can either thicken the syrup or melt some apricot jam then glaze the meatballs. I didn't as I find mine 'shiny' enough.
4. Can deep fry this dish if you do not own an airfryer.
