Ayam Bakar Padang by Julia Yany



One of my favourite menu at nasi padang eatery, the ingredients listed in Prima Taste nonya curry paste has the similar spices ingredients as Indonesian ayam baker. Feeling great to find Prima Taste sauce. Free from msg and made with natural ingredients without preservatives. Now I can cook my ayam bakar without much hassle of pounding and gather so many ingredients and yes! It tastes so good.

Ingredients
1 whole kampong chicken,cut into 4 parts
1 packet Prima Taste nonya curry paste
200ml coconut milk
100ml water
5 pcs lime leafs
1 tablespoon kecap manis (sweet soysauce)
2 tablespoons cooking oil

Method
Heat 2 tablespoons oil in a cooking pan. Add in one packet of nonya curry paste and lime leafs. Stir for awhile, add in chicken pieces and stir to combine. Pour in coconut milk and water. Lower heat, cover cooking pan and let it simmer. In between simmering, stir once in a while. Add a little more water if needed. Simmer until sauce are thickened and chicken are perfectly cooked & tender. Lastly add in sweet soysauce (kecap manis) and stir to combine. Off the heat.

Pre heat oven to 190 degrees celcius. Place the cooked chicken in the casserole. Keep aside extra sauce for basting. Grill chicken in the oven for 15 minutes, flip over chicken pieces to another side and continue to grill for another 15 minutes or to desired charred. Served with extra basting sauce.
Served hot with blue pea rice or white rice.
